I’ll be honest, I really did not think I was going to get a post up for this week because it has been GARBAGE (for lack of a better word/in order to avoid profanity). But then I thought about what type of post would bring me joy and landed here. With food. Duh. So, I hope you all get a bit of joy from the following sprinkle of unplanned and unfiltered food inspiration we’ve had over the last two months!
Have you tried my Breakfast Casserole yet? We had it for dinner (of course), and decided to eat it out on our balcony. My breakfast casserole literally had a golden hour photo shoot. I couldn’t resist š
How does Easter feel like it was 5 years ago already? We made a delicious ham and my Parmesan Roasted Brussels Sprouts, and totally cheated with some good old fashioned Kraft macaroni and cheese. Don’t come for me. I know there are better options out there, but this is what happened.
While I usually take the lead on making dinners, sometimes Gary takes breakfast on all by himself! One Saturday morning he brought me breakfast tacos in bed and I swore in that moment my eyes turned into hearts. Speaking of hearts…we’re still eating on our heart plates, and Gary made me a quick weekday breakfast while I worked from home and he had the day off. It just radiates joy, right?
These next two items are going to be on our summer menu on repeat! Super easy Mediterranean chicken bowls and chicken caesar wraps will be perfect when we don’t want to heat up our apartment too much with the stove or oven. I’ll add them to my list of recipes to write up and share here for you! š
The way to Gary’s heart is through Chinese food. Homemade Mongolian chicken and fried rice? Yes, please!
Even though Santa Barbara’s takeout game is strong, we are such creatures of habit and have our favorites on repeat. We limit ourselves to once a week (or less) depending on what we have going on. I am obsessed with this steak burrito mojado, and this delicious burger with bbq sauce and crispy onion strings. Yum!
We had a little bit of Cilantro Lime Salmon leftover one evening, so we improvised with fish tacos and it was a total hit for an easy balcony dinner. Leftovers don’t have to be boring!
Here’s a little teaser of a recipe I have coming to the blog soon! Cheesy sausage pasta that gets made in one pan. It is so delicious and easy to make. Not to mention it photographs well š
I feel like we’re in a bit of a food rut, and I never know what to make for dinner these days, so please share what you’ve been eating lately! I need some new ideas!
