Breakfast Casserole

I wouldn’t necessarily call myself a lover of casseroles in general, but when they’re of the breakfast variety, you can definitely count me in! This breakfast casserole is perfect for a variety of occasions. It’s a crowd-pleaser at brunchy potlucks. It’s a great make-ahead breakfast to portion out and microwave for busy weekday mornings. But my favorite time to eat this casserole is for dinner! I don’t know what it is, but there’s just something about eating breakfast casserole for dinner that makes you feel like you have your life together 😉

This simple turkey sausage, egg, and cheese casserole is held together by a loaf of grocery store bakery French bread. You know the kind they guarantee hot at 5 PM that smells so delicious you contemplate eating it in the car on the way home? That kind. You can get it a day or two before you make your casserole, though, as it is going to soak up cheesy eggy goodness no matter what! The breakfast meat can also be swapped out to accommodate your preferences. The recipe is written for turkey sausage, but pork sausage, bacon, and/or ham would be just as tasty.

You can also prep this casserole ahead of time by assembling it, covering it, and refrigerating it overnight. Then, in the morning, you can just pop it in the oven. It’s a total game changer! This would be a great dish to add to your Mother’s Day brunch, hands down!

A simple, savory casserole that’s perfect for a crowd!

Ingredients

  • 1 Loaf French Bread

  • 16 oz. Ground Turkey Sausage

  • 8 Eggs

  • 2 Cups Milk

  • 1+1/2 Cups Shredded Sharp Cheddar Cheese

  • 1/2 TBSP Yellow Mustard

  • 1 TSP Garlic Powder

  • 1/4 TSP Salt

  • 1/2 TSP Pepper

Directions

  • Preheat oven to 350° and lightly grease a 9×13 inch baking pan. Slice french bread into 1 inch cubes and spread evenly throughout pan. Set aside.
  • Fully cook turkey sausage in a skillet over medium heat. While the turkey sausage is cooking, grate cheddar cheese (if you do not have a bag of pre-shredded cheese on hand) and set it aside. Once turkey sausage is fully cooked, evenly distribute it over the top of the cubed bread.
  • In a medium mixing bowl, whisk together eggs, milk, mustard, garlic powder, salt, and pepper.
  • Sprinkle 1 cup of cheese (saving 1/2 cup) over the top of the turkey sausage. Then pour egg mixture over the top, being sure to get every piece of bread wet. Finally, sprinkle remaining 1/2 cup of cheese over the top of the casserole.
  • Bake casserole in the oven, uncovered, for 35-40 minutes (the cheese should just start to be getting slightly brown). Remove casserole from the oven, and let it sit for 10 minutes. Then cut into individual portions and serve!

Notes

  • When you’re cubing your french bread, try not to press down on it too hard. The fluffier your pieces are when they go in the pan, the better!
  • Some people aren’t “mustard” people, but trust me when I say it’s the secret ingredient in this recipe. Don’t omit it!
