Cilantro Lime Salmon

How is it Friday again?? Time is seriously flying by. I just know it’ll be 2022 before we know it. I had hoped to get this recipe up and posted on Tuesday, but you know, #life.

Anyway, here I am sharing another one of our favorite salmon recipes that is perfect for welcoming in the spring and summer months! This actually might have been the first way Gary and I ever made salmon together. We very much consider ourselves to be saucy people. Not in the cheeky sense, but in the sense that we don’t eat many things plain or sans sauce. Plain salmon = bleh. Salmon with some sort of sauce on top = yum. No questions asked.

Before I get into this quick recipe, I should put the disclaimer that if you’re one of those people that unfortunately thinks cilantro tastes like soap, stop here! I’d suggest you stick with my Sweet & Savory Salmon recipe, because this one in particular just won’t be your jam. For everyone else who likes cilantro and lime flavors paired together, carry on 🙂

This cilantro lime salmon is the perfect weekday dinner. It only has a few ingredients, it’s quick to make, and cleanup is a breeze. Check, check, and check! I should also mention that it stores well for leftovers. We love pairing this dish with my Lemony Couscous and/or Parmesan Roasted Brussels Sprouts. When we made this dish last week, we even used some of the leftovers for fish tacos. Yummy! I hope you all enjoy!

Cilantro Lime Salmon

A fresh and flavorful salmon recipe. Great by itself, paired with veggies and a starch, or even in fish tacos!

Ingredients

  • 1 1/2 lbs. Atlantic Salmon

  • 1/3 Cup Fresh Cilantro

  • 1 Lime

  • 3 Garlic Cloves

  • 2 TBSP Olive Oil

  • Salt

  • Ground Black Pepper

Directions

  • Preheat oven to 400° and line a baking pan with foil or parchment paper. Place salmon skin-side down on the pan. Pat dry with a paper towel, and season with salt and pepper.
  • Add cilantro, zest and juice from lime, garlic, and olive oil to blender or food processor. Blend until smooth.
  • Pour and spread the mixture over the top of the salmon. It may be a bit runny depending on how juicy your lime was…that’s okay!
  • Bake in oven for ~18 minutes. Remove from oven and enjoy!

Notes

  • If you prefer to cook smaller filets, cut down your cook time by 3-5 minutes. Nobody likes overcooked salmon!
  • If you’re a garlic lover (like Gary), consider the number of cloves listed in this as a suggestion. We’ve definitely made it with double the amount and it was still delicious. I find that 3 is the sweet spot for me, personally 🙂
