Is it just me or is this year flying by? And it’s not just you…I’m still over here slacking on keeping up with this blog. But, rest assured a Trader Joe’s post is coming soon, and I have a bunch of recipes in the works to share in the coming months. Rest assured, this girl will get her groove back…eventually š
In the meantime, I figured I’d give you a quick glimpse into what we’ve been up to lately. The TLDR? Lots of cooking, baking, eating, spending time outside, and continuing to make our house a home!
So by now, you’ve probably caught on to the fact that I’m obsessed with all things Half Baked Harvest. I highlighted a bunch of my favorite recipes in my Peiffer Plates ā February 2022 post. Well, we’re continuing to make our way through that cookbook before we get our hands on her new one!
This blueberry lemon pull-apart bread was a labor of love, but Gary and I enjoyed eating it for breakfast for a whole week! Was it good? Yes. Was it worth the effort? Debatable. Will I make it again? Perhaps. But was I proud as heck when these loaves came out of the oven? 100% yes!
Then came the sun-dried tomato turkey meatball bake. Yum. Yum. Yum. The sun-dried tomatoes, the ricotta cheese, the fresh basil, and the tasty meatballs made this a a definite make again recipe!
I’m a sucker for a cookie. Fun fact: even though Gary isn’t huge on baked goods, he’s a sucker for cookies too š Half Baked Harvest + cookies? Yes, please! We loved the combo of chocolate chips and chocolate chunks, and the topping of sea salt on these cookies. I usually have leftovers that end up in the freezer when I bake…not this time!
Okay, I promise we do things (sometimes) that don’t involve food, but we also celebrated Gary’s birthday a few weeks ago, and that involved several celebratory dinners! A fancy steak dinner out, homemade linguine and clams, and delicious seafood pasta and chowder fries by the beach. It certainly wasn’t 30 days of 30, but I think Gary did just fine for his 31st!
Let’s switch gears over here. We’ve taken on a few projects around the house lately..and maybe we’ll eventually learn that we shouldn’t start them after a long day of work! Gary learned the hard way that assembling filing drawers is no small task, and we definitely underestimated how much work it would be to hang some photos above our couch and have them spaced evenly! We also learned that re-caulking a shower is no fun. Home ownership isn’t all fun and games, but we’re still enjoying it! PS – Please ignore our hot mess of a couch…pillows were everywhere after we trampled all over them during our picture hanging saga.
Spring is springing, which means that we’ve also been enjoying warmer weather, spending time at the beach and the pool, and planting flowers and herbs on our patio.
Gary and I both took Friday off work last week to have a date day. Best. Choice. Ever. We had a blast going down to the harbor, eating lunch outside, and enjoying delicious McConnell’s ice cream with a view.
To prove that life isn’t only good food and good weather over here, here’s a photo of me eating cereal out of a mixing bowl because we forgot to run the dishwasher the night before. The next photo of my hand? That’s toothpaste. Yes, half a tube of toothpaste managed to explode into my hand before work one morning. And that delicious french toast and mimosa breakfast looks yummy, huh? Well, we had to have our car towed and then we walked home from the repair shop before that was consumed last weekend. I’m just here to remind you that social media doesn’t always show you the whole picture š
Alright, on brand with everything not being rainbows and sunshine, uploading all of these photos has taken 230943 years so I’m going to leave you with one more delectable photo of the most delicious berry cobbler I made over the weekend. Recipe to hopefully come this summer! š
