Life Lately

Alright friends, it’s been awhile since I did a quick photo dump and shared what we’ve been up to lately! Spoiler alert: not a whole lot! We’re still doing our part to slow the spread of COVID-19 by staying home and not gathering with others. But that just means more quality time together šŸ™‚ Per usual, 99% of my camera roll is food, especially because I’ve been trying to step up my game with crafting some delicious new recipes to share here with you. Let’s take a look at some of the other photos, though!

It rained here at the end of January. This is worthy of blogging about because it feels like it never rains in Southern California! At one point it was hailing and I could not contain my excitement. It’s not like I lived in Iowa with all sorts of weather for two years or anything! I absolutely love the view from our apartment after storms.

Aside from one week of cold weather, I swear, Santa Barbara likes to show off in January and February. It always makes me appreciate living here, and reminds me why we pay the big bucks to do so! We’ve enjoyed so many walks on the beach, picnics at the park, and meals out on our balcony over the last few weeks. It brings me such joy when it’s 70 and sunny during the “winter.”

The pool at our apartment complex has opened back up by reservation only, and it’s my new favorite thing. We are able to make one reservation per week for one hour where we are the only two people in the entire pool area. We aren’t just talking about one small pool, either…there are two pools and three hot tubs! It’s the best and always makes me feel like I’m at some sort of private resort. We’ve really lucked out with beautiful weather during most of our reservations.

Valentine’s Day came and went, and we enjoyed a cozy date day at home together. We ate on our adorable heart plates (which I haven’t stopped eating off of, by the way), set up our dinner table with flowers and candles, and splurged on making a fancy crab pasta dinner. It was so delicious, and I personally prefer memories like these much more than eating out at a restaurant to celebrate.

Speaking of heart plates — I saw these two photos on my camera roll and knew I just had to share! Apparently, Tik Tok is full of fun tortilla hacks these days (like my Breakfast Quesadillas – Tik Tok Style). I’ll have to do a quick post on these little foldable grilled goodies. They were so easy to make and we filled ours with scrambled eggs, cheese, bacon, rice, and green onion. Yum!

What else is new around here? I’ve started to wear my hair curly more often…again, I know this is hardly blog-worthy news, but those of you that know me know that I usually throw my hair up in a bun or blow-dry and straighten it. My curls have come out in full force in 2021! Since I haven’t gotten a haircut in an embarrassingly long time (and no, I’m not going to let Gary anywhere near my hair with scissors), the extra length helps makes me feel like less of a poodle šŸ™‚

In other highly exciting news in the Peiffer household, Gary finally let me organize his side of the closet. Hallelujah! I snapped this photo, and even though the hangers don’t all match, it still makes me happy to look at it.

We also started Gary’s 30 Days of 30 this month! He turns 30 in March, and since this will be his second COVID birthday that we don’t get to spend with friends and family, I wanted to make it extra special. Stay tuned for a future blog post all about it!
